Scalloped Potatoes and Cauliflower
I'm always trying to find ways to "sneak" extra vegetables in my family's diet. Recently, I added cauliflower to our scalloped potatoes and it was a real hit. Here's what I did.....
1 onion chopped
8-10 potatoes peeled and sliced
1 head of cauliflower chopped
1/4 - 1/2 lb. of deli ham chopped - approx. - add desired amount and any ham or bacon will do
1 can of Cream of Mushroom soup
2 cups milk - approx. - add to desired consistency
1 cup shredded mozzarella cheese
salt and pepper to taste
Combine all ingredients in a roaster. Bake at 375-degrees until potatoes are soft, approx. 1 - 2 hours depending on thickness of slices. Enjoy!!
